The Perfect Summer Cake...

...and no decorating required!!

With super high temps these days ice cream cake sounds sooo good.  But this is no regular ice cream cake... it is an Ice Cream Cookie Sandwich Cake!!

Ice Cream Cookie Sandwich Cake

Ingredients

2 pints of your favorite ice cream
1 package of chocolate fudge cake mix
1/2 cup of butter


Step 1.
Let your ice cream soften a bit so it is 'workable' (20 minutes or so).  Line a 9 inch round cake pan with aluminum foil and spread ice cream in pan.  Cover with plastic wrap by sealing it onto the ice cream.  Place in the freezer until firm (approximates an hour or so).  Remove from pan and keep it in the freezer (this makes it easy to not have to fight it in the pan when it is super frozen).

Step 2.
Preheat oven to 350 degrees F.  Line bottom of two 9 inch round cake pans with aluminum foil.  Place cake mix in large bowl and add butter.  Mix until crumbs form.  Divide 'crumbs' into the two pans and press lightly.  Bake for 15 minutes at 350 degrees F. Once done let cool at least 10 minutes (if you don't it will have a greater chance of breaking).  Remove from foil and let cool completely.

Step 3.
Assemble by placing one cookie layer on your serving dish.  Bring out your frozen ice cream, peel foil off and place on top of cookie layer.  Place second cookie layer on top of that.  You can serve it right away or to save it for the party re-wrap in foil and return it to the freezer until party time.  To preserve even longer place in an airtight container.

I had originally made this for my brother in law for his birthday and he loved it so much he ate it all himself!!:)
